- Use milk chocolate or dark chocolate for dipping the balls in, instead of white chocolate.
- Mix in some chopped nuts for added crunch. Pecans or walnuts would both be a great pairing.
- In the pumpkin mixture, you could add in some mini chocolate chips for added sweetness.
- Instead of graham crackers use gingersnap cookies or even vanilla wafer cookies.
- Swap the vanilla extract with maple extract for a decadent punch of flavor.
- Sprinkle crushed graham crackers on the top of the truffles for added texture.
- Chop up some cookies and mix in the pumpkin batter for a crunch.
- Decorate the top of the truffles with sprinkles, colored sugar, etc.
- Drizzle peanut butter or a nut butter on top of the truffles instead of colored chocolate.
- Mix in some dried fruit like apricots, dried cranberries, etc
- Place a mini marshmallow in the center of the truffle balls. For a sweet surprise in the center.

Tips for Success
I wanted to share a few different ways you can find success when making these truffles. Making truffles doesn’t have to be hard, I share my favorite tips below.
Hand Mixer or Stand Mixer
I find that using a hand mixer or stand mixer is best for creating the perfect texture. But you do not have to use a mixer if you don’t own one. Just make sure you get it fully mixed.
- Reach for a cookie scoop to create evenly sized-pumpkin truffle balls. You can use a small cookie scoop to form the balls. If you don’t have one, you can just eyeball it if you prefer.
- Chill the pumpkin truffles in the fridge before you go to dipping them in the chocolate. This ensures they will hold the proper shape and not fall apart.
- You can grease your hands with a cooking spray so that if you need to finely shape the truffles you can touch the mixture without it sticking to your hands.
