You can melt the chocolate in the microwave or on the stovetop using a double boiler. Either method will work for melting the chocolate. Just make sure to follow the directions on the package.
Make sure to allow time for the truffles to set up fully. Just ensure you let them fully dry before you try to place them in a container to store.
Refrigerate the truffles in a sealed container in the fridge for up to 7-10 days. If you plan to stack the truffles just lay a layer of wax paper between the layers. For this reason, it helps to prevent the truffles from sticking together.
Of course, you can also freeze the truffles as well. Simply place the truffles in a freezer bag or freezer container. Freeze the truffle bites for 2-3 months. Then thaw them in the fridge overnight. Or eat them straight from the freezer.
