For the Tomato  Soup

1 tbsp olive oil

1 medium onion, diced

2 cloves garlic, minced

1 (28 oz) can crushed tomatoes

3 cups vegetable broth

1 tbsp tomato paste

½ tsp dried basil (or 1 tbsp fresh)

½ cup  heavy cream or milk (optional)
