Making the Tomato Soup
1. Sauté the Aromatics
In a large pot, heat the olive oil over medium heat.
Add the diced onion and sauté for about 5 minutes until softened and translucent.
Stir in the minced garlic and cook for another minute until fragrant.
2. Build the Flavor
Add the crushed tomatoes, vegetable broth, tomato paste, basil, and thyme (if using).
If the tomatoes are too acidic, mix in the sugar.
Stir well and bring to a gentle simmer.
3. Simmer and Blend
Let the soup cook for 15–20 minutes to develop the flavors.
Blend the soup using an immersion blender for a smooth consistency or transfer it to a blender in batches.
For a creamier texture, stir in the heavy cream or milk after blending.
Season with salt and pepper to taste.
Making the Cheesy Onion Toast
1. Preheat the Broiler
Set your oven’s broiler to high.
2. Assemble the Toast
Place the bread slices on a baking sheet.
Arrange thinly sliced onions over each slice.
Top generously with shredded cheddar cheese.
3. Broil to Perfection
Place the baking sheet under the broiler for 3–5 minutes.
Watch closely to prevent burning—toast is ready when the cheese is melted, bubbly, and golden brown.
Serving
Ladle the hot tomato soup into bowls and sprinkle with fresh parsley or chives.
Serve the cheesy onion toast on the side or dip it into the soup for extra indulgence.
Enjoy this cozy and satisfying meal on a chilly day!
