Ingredients (Lightened & Low-Point)
Base Layer
- 1 can fat-free refried beans
- 1 cup fat-free Greek yogurt (instead of sour cream)
- 1 tsp taco seasoning (low-sodium)
Cheese & Mix-ins
- ½ cup low-fat shredded Mexican cheese (reduced-fat)
- ½ cup fat-free mozzarella or cheddar (optional – keeps points very low)
- 1 can diced green chiles (zero points)
- 2 tbsp salsa or rotel (zero points)
Toppings (Optional, Zero-Point)
- Chopped green onions
- Jalapeño slices
- Chopped tomatoes
- Cilantro
- A squeeze of lime

Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix:
- fat-free refried beans
- fat-free Greek yogurt
- taco seasoning
- green chiles
- salsa/rotel
- Spread the mixture in a small baking dish.
- Sprinkle the reduced-fat cheese and fat-free cheese on top.
- Bake 18–20 minutes until hot and bubbly.
- Add your toppings and serve warm!
