- Cook the turkey:
Spray a pan with cooking spray. Cook turkey and onion over medium heat until browned. Add garlic and cook 1 more minute. - Add seasoning:
Stir in taco seasoning, cumin, chili powder, paprika. Coat the meat well. - Build the soup:
Add chicken broth, Rotel, corn, and black beans. Mix and bring to a simmer. - Let it simmer:
Cook for 10–15 minutes to blend flavors. - Make it creamy (the low-point way):
In a small bowl, whisk Greek yogurt + almond milk until smooth.
Remove soup from heat, then stir in the yogurt mixture slowly so it doesn’t curdle. - Taste & serve:
Add salt/pepper to taste.
Serve warm, optionally topped with cilantro or lime (0 pts).
