Ingredients
For the Patty Melts: 680 grams ground beef

12 slices sourdough bread
120 milliliters Secret Sauce (see recipe below)
3 Vidalia onions, thinly sliced
6 slices Cheddar cheese
8 teaspoons unsalted butter
For the Secret Sauce:
60 milliliters Dijon mustard
60 milliliters mayonnaise
5 milliliters barbecue sauce
2.5 milliliters hot sauce
Secret Sauce Instructions 🥣
Mix Ingredients:
In a bowl, combine 60 milliliters Dijon mustard, 60 milliliters mayonnaise, 5 milliliters barbecue sauce, and 2.5 milliliters hot sauce.
Refrigerate:
Cover and refrigerate the sauce for up to 3 days.

Prepare the Onions:
Caramelize Onions:
Melt 2 tablespoons of butter in a medium cast iron skillet over medium heat.
Add thinly sliced onions and cook until tender and golden, about 35 minutes, stirring occasionally.
Prepare the Patties:
Form Patties:
In a bowl, combine 680 grams ground beef, 1 teaspoon kosher salt, and ½ teaspoon ground black pepper.
Shape the mixture into 6 oval patties.
Cook Patties
In a large cast iron skillet, cook the patties over medium-high heat until golden brown and cooked through, about 2 minutes per side.
Remove the skillet from heat and transfer the patties to a plate.
Wipe out the skillet.
Assemble the Sandwiches:
Layer Ingredients:
Layer one slice of bread with 1 tablespoon of Secret Sauce, 2-3 tablespoons of caramelized onions, 1 slice of cheese, 1 patty, and another 1 tablespoon of Secret Sauce.
Cover with another slice of bread.
Repeat with the remaining ingredients to make 6 sandwiches.
Grill the Sandwiches:

Melt 1 teaspoon of butter in the same skillet used for the onions over medium heat.
Place the assembled sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
Repeat for all sandwiches, adding more butter as needed.
