1. Cream the Butter & Sugar
In a large mixing bowl, beat the softened butter and granulated sugar until pale, fluffy, and creamy—about 3 minutes.
(This step adds air and creates soft, tender cookies.)
2. Add Eggs & Flavorings
Beat in the eggs one at a time. Add the vanilla extract and optional almond extract. Mix until smooth.
3. Combine Dry Ingredients
In a separate bowl, whisk together:
- flour
- baking powder
- salt
Slowly add this dry mixture to the wet mixture. Mix until a dough forms.
4. Chill the Dough
Divide the dough into two flat disks. Wrap each in plastic wrap.
Refrigerate for at least 1–2 hours.
(Chilled dough prevents spreading and makes rolling easier.)
Formation: Rolling, Cutting, and Shaping
1. Prepare Your Surface
Lightly dust a clean countertop with flour.
Take one disc of dough out of the fridge and let it soften slightly (5 minutes).
2. Roll the Dough
Using a rolling pin, roll the dough to ¼ inch thickness for soft cookies or ⅛ inch for crisp ones.
3. Cut Out Shapes
Use cookie cutters—stars, trees, hearts, snowflakes, gingerbread people, etc.
Transfer shapes to a parchment-lined baking sheet.
4. Bake
Bake at 350°F (175°C) for 8–10 minutes or until edges are lightly golden.
Cool completely before decorating.
5. Decorate with Love
Frost with royal icing or glaze. Add sprinkles, colored sugars, or leave them classic and simple.
