NO BAKE – Cream-Cheese Coconut Snowballs
Instructions
- In a large bowl, beat the softened cream cheese until it’s smooth and creamy.
- Gradually add the confectioners’ sugar, mixing until fully incorporated.
- Stir in the vanilla extract for a sweet, aromatic touch.
- Fold 1 cup of the shredded coconut into the cream cheese mixture until evenly combined.
- Cover the bowl and chill in the refrigerator for 30 minutes to firm up the mixture.
- Once chilled, scoop small amounts and shape them into bite-sized balls.
- In a separate bowl, mix the remaining 1 cup of shredded coconut with melted butter and a pinch of salt.
- Roll each cream cheese ball in the coconut-butter mixture until fully coated.
- Arrange the coated snowballs on a parchment-lined tray and refrigerate for 15–20 minutes to set.
- Serve and enjoy these creamy, coconut-filled delights!
