- Toss the potatoes until they are evenly coated with the oil and seasonings.
- Arrange the seasoned potatoes in a single layer on the prepared baking sheet.

- Scatter the chopped bacon evenly over the top of the potatoes.
- Bake for 30-35 minutes, tossing the potatoes and bacon halfway through the cooking time, until the potatoes are golden brown and crispy, and the bacon is cooked through.
- Remove the baking sheet from the oven.
- Let the sheet pan cool for 5 minutes before garnishing with the chopped fresh chives or parsley.
- Serve warm
