Fried Eggplant Fans Fries

Step 1
Peel the eggplants. Slice through the eggplants without cutting through the stems.

Step 2
Cut the eggplant in the other direction so they look like strips that are attached by the stem. Mix the salt with cold water in a bowl. Add the eggplants and allow them to soak for 20 minutes.

Step 3
In a bowl, whisk the eggs with the cornstarch. Pat the eggplant dry.

Step 4
Dip the eggplant in the egg mixture, ensuring that all of the strips are well coated.

Step 5
Mix the breadcrumbs with the black pepper and herbs in a bowl before moving it to a shallow dish. Coat the eggplant in the breadcrumb mixture until evenly coated.

Step 6
Fry the eggplant in hot oil for 10 minutes.

Step 7
Remove and serve immediately!
