Forfar Bridies (Scottish Hand Pies)

1. Make the Pastry:
In a large bowl, combine flour and salt. Add diced butter and rub it into the flour until the mixture resembles coarse breadcrumbs. Gradually add cold water and mix until the dough comes together. Shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.

2. Prepare the Filling:
In a skillet, cook minced beef and onions over medium heat until the beef is browned and the onions are soft. Season with salt and pepper. Stir in beef suet if using. Let the filling cool slightly.

3. Assemble the Bridies:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Divide the dough into equal portions and roll each into a circle. Place a spoonful of filling on one half of each circle.

4. Shape the Bridies:
Fold the pastry over the filling to form a half-moon shape. Crimp the edges with a fork to seal.

5. Bake:
Place bridies on the prepared sheet and bake for 25–30 minutes, or until golden brown and flaky.

6. Serve:
Enjoy warm, either on their own or with classic sides.
