Berry Crumble Cheesecake

Instructions

 

 

1. Make the crumble

Mix graham crumbs, melted butter, and sugar.
Press 2/3 into a springform pan for the crust.
Reserve the rest for the topping.

2. Make the berry mixture

Heat berries, sugar, and lemon juice in a saucepan for 5–7 minutes until juicy. Cool slightly.

3. Make the cheesecake filling

Beat cream cheese, sugar, and vanilla until smooth.
Fold in whipped cream.

4. Assemble

Spread cheesecake filling over crust.
Spoon berry mixture on top and gently swirl.
Sprinkle remaining crumble over the top.

5. Chill

Refrigerate at least 4 hours (overnight best).
