Instructions
Make the Cake:
1. Preheat oven to 165°C (325°F). Grease and flour a bundt or tube pan.
2. Cream butter and sugar together until light and fluffy.
3. Add eggs one at a time, mixing well each time.
4. Mix in sour cream and vanilla.
5. In another bowl, whisk flour, baking powder, and salt.
6. Add dry ingredients to the wet in three parts, mixing gently.
7. Fold in mashed bananas.
8. Pour batter into the pan and bake 70–80 minutes or until a toothpick comes out clean.
9. Let cake cool completely before frosting.
Make the Banana Pudding Frosting:
10. Whisk pudding mix with cold milk until thickened.
11. Add condensed milk and vanilla; mix until smooth.
12. Fold in whipped cream to make it fluffy and spreadable.
Make the Crumble:
13. Mix crushed cookies with melted butter. Set aside.
Assemble:
14. Frost the entire cake generously with banana pudding frosting.
15. Press crumble over the top.
16. Slice and serve chilled for best texture
