Southern Fried Cabbage
Ingredients

1 large green cabbage, chopped into bite-size pieces

6 slices thick-cut bacon, diced

1 medium onion, sliced

1 red bell pepper, chopped

2 cloves garlic, minced

½ teaspoon smoked paprika

½ teaspoon crushed red pepper flakes (optional)

½ teaspoon black pepper

Salt to taste

1 tablespoon apple cider vinegar (optional but traditional)
Instructions

Cook the bacon
In a large cast-iron skillet over medium heat, cook diced bacon until crisp. Remove bacon with a slotted spoon and set aside, leaving the bacon fat in the pan. -
Sauté the vegetables
Add sliced onion and bell pepper to the bacon fat. Cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds. -
Fry the cabbage
Add chopped cabbage to the skillet. Toss well so it absorbs the bacon fat. Cook uncovered for 10–12 minutes, stirring occasionally, until cabbage is tender with lightly golden edges. -
Season
Sprinkle in smoked paprika, red pepper flakes, black pepper, and salt. Stir in apple cider vinegar if using. -
Finish
Return crispy bacon to the pan, mix gently, and cook for another minute.
