Ingredients
- 2 lbs beef stew meat, cut into cubes
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 cups beef broth
- 2 large potatoes, peeled and diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 green bell pepper, chopped
- 1 jalapeño, seeded and minced (optional for heat)
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
Instructions
- Brown the Beef:
Heat oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside. - Sauté the Veggies:
In the same pot, add onion, garlic, green bell pepper, and jalapeño (if using). Cook until softened. - Combine Ingredients:
Return the beef to the pot. Add beef broth, diced tomatoes, potatoes, kidney beans, chili powder, cumin, salt, and pepper. - neext too page
