Cream Cheese Cranberry Loaf

This  Loaf is a moist, tender quick bread with a subtle tang from and a burst of flavor from fresh cranberries. The loaf is incredibly rich and soft, with an optional nutty crunch from pecans. It’s a delightful treat for breakfast, a coffee break, or dessert.

 

 

Cream Cheese Cranberry Loaf

Ingredients:

Unsalted butter, softened ½ cup (1 stick)
Cream cheese, softened 4 oz
Granulated sugar 1 cup
Vanilla extract 1 teaspoon
Large eggs 2
All-purpose flour 1 ¾ cups
Baking powder 1 teaspoon
Salt ½ teaspoon
Cranberries, fresh or frozen 1 ½ cups
Pecans, chopped (optional) ½ cup
